The Whole Quesadilla

From queso to cookies Taco Mama feeds us well.

Our Taco Mama is The Summit location. But with nine locations in the Birmingham metro area, you can easily find your own Taco Mama for dining in, pick up, delivery, and catering. You may also order online where Happy Family Take Out Meal, Taco and Nacho Bar, and Margarita Mix by the gallons are popular. And for patrons with allergies, Taco Mama also has an Allergen Menu with symbols for fish, shellfish, soy, peanuts, tree nuts, dairy, and eggs, alongside each menu item that contains these common allergens. Mama has thought of everything!

As always, we start with margaritas, from a long list of both seasonal and signature selections. Our favorite seasonal margs include pomegranate, blood orange, and watermelon. They bring us back to celebrate the seasons, from winter to summer. But since we are choosing favorites, it is blood orange. Here Chips and Queso is on the extras list. But this milky, mild cheese is our favorite starter. We dip thin, crisp chips into it and its creamy gooiness is a palate pleaser. But we don’t stop there. Taco Mama’s queso is also available as a side that we pour over our plates.

The whole quesadilla, indeed! Choose from a choice of meats: ahi tuna, grilled or fried flounder, grilled shrimp, marinated chicken, ground beef, barbacoa, tenderloin steak, chorizo, slow roasted pulled pork. For vegetarians, vegans, or those in the mood for a meatless quesadilla, veggie mixture and tofu are also options. But no matter what we choose it comes with free, fresh toppings, crisp chips, salsa, and sauce. We select the marinated chicken and add sour cream, tomatoes, lettuce, and avocado. The soft, warm tortillas are overstuffed with melted cheese, which is melded to each tender bite of lean chicken. Our layered high toppings add creaminess, acidity, and texture to this scrumptious plate. Next time, I order my own as my meal!


 

We turf and surf our entrées. Kev opts for The Sizzler Taco Basket. Generous slices of tender tenderloin overfill his two soft, flour tacos. The flavorful steak is enhanced by grilled onions, creamy avocado, crisp lettuce, fresh tomatoes, spicy red chile butter sauce, and a marvelous queso fresco. His side selection of cilantro lime rice and chips round out this beef basket beauty. I select Mama’s Salad. Added protein options include grilled chicken, grilled or fried flounder, or my preference of grilled shrimp. More shrimp than I can count are tossed among and atop the mixed greens, along with shredded mozzarella, tomatoes, cucumbers, and croutons. Dressing options include chipotle ranch and cilantro-lime vinaigrette. I go with the ranch and drizzle it all over this entrée salad. And every bite proves Mama knows best.


Taco Mama brings the heat and the sweet… We end with decadent chocolate chip cookies for dessert.
